Vanilla Chia Parfaits with Stewed Apples
It tastes like Apple Pie!

Making these is supposed to be relaxing and fun. Don’t stress out about the measurements, just go with your heart. My favourite part is stewing the apples because it smells heavenly.

Ingredients:
Overnight Chia Pudding
1 Container (650g) of Unsweetened Plain Vegan Yogurt (I like Riviera Coconut)
4 Splashes Unsweetened Soy Milk (Can use any kind of plant milk)
4 Tbsp Chia Seeds
4 Splashes of Vanilla (About 1/2 Tbsp in each portion)
4 Splashes of Maple Syrup (Adjust to how sweet you want)
Stewed Apples
4 Apples (Diced)
Water
Cinnamon
Dry Toppings
Walnuts
Raisins (optional)
Directions
For the Chia Pudding
Divide the yogurt into 4 glass containers. Mix in 1 splash of milk into each container then add in 1 Tbsp of chia seeds into each container and stir. Next add a splash of vanilla in each and maple syrup. Mix it all together. Let them sit in the fridge overnight before serving and adding toppings!
Stewed Apples
Dice the apples and add them to a stainless steel deep pan or pot. Fill with water until the apples are slightly submerged. Add desired amount of cinnamon on top and cook over medium heat. Keep adding more water and stirring as needed. You don’t want the apples to start sticking to the bottom. Keep cooking until the apples are really soft. This part smells SO good! Once they are soft and cooled down add them to 4 separate glass containers to have prepped for the week or put them in 1 container if you want to dish them out each day. Don’t forget to eat a few now because they are so yummy. To serve, microwave for 40-60 seconds so that they are warm before adding them on top of the chia parfaits.
Other Toppings
I like keeping a bag of shelled walnuts in the freezer and I top this parfait with a handful of those and a handful of raisins. Be sure to heat up the apples (I microwave for 40 -60 seconds) before adding them on top for extra goodness. Enjoy!
Other thoughts
I like dividing the chia pudding into 4 individual containers and the apples into 4 individual containers so that it is easy to grab when I’m ready to eat. I have to trick myself into eating healthy sometimes but these are so satisfying because of the chia seeds for fibre and the fun toppings. These ones remind me of apple pie which makes me feel like a little kid again. What do you notice when you’re eating them?
